  • 4 large zucchinis
  • 15 ounces whole milk ricotta cheese
  • 1.5 cups shredded low-moisture mozzarella cheese (divided)
  • 1 cup grated Parmesan cheese (divided)
  • 1 large egg
  • 3 cloves minced garlic
  • ¼ cup chopped fresh basil
  • 2 cups marinara sauce

Instructions

  1. Wash and slice zucchini lengthwise into planks about ⅛-inch thick.
  2. Arrange zucchini on paper towels and sprinkle with salt; let sit for 20-30 minutes to sweat.
  3. Pat dry each plank, then mix ricotta, mozzarella, Parmesan, egg, garlic, basil, salt, and pepper in a bowl.
  4. Spread marinara sauce over the bottom of a baking dish.
  5. Roll each zucchini plank with 1 tablespoon of the cheese mixture, placing seam-side down in the dish.
  6. Top with remaining marinara and cheeses.
  7. Bake at 400°F (200°C) for 20-25 minutes until bubbly and golden.
  8. Allow resting time before serving.
