  • 3 cloves garlic (minced)
  • 3 cups low-sodium chicken broth
  • 2 boneless skinless chicken breasts (about 1 lb)
  • ¼ cup sun-dried tomatoes (chopped)
  • 2 cups dry short pasta or broken lasagna noodles
  • 1 cup half-and-half
  • Fresh spinach (roughly chopped)
  • Ricotta cheese, Parmesan cheese, and shredded mozzarella cheese for garnish

  1. Melt butter in a Dutch oven over medium heat. Add onion and sauté until lightly browned, about 3–4 minutes. Stir in garlic, Italian seasoning, salt, pepper, and chili flakes; cook for another minute.
  2. Pour in chicken broth along with chicken breasts and sun-dried tomatoes.
  3. Increase heat to medium-high until it simmers. Cover and reduce heat; cook for 12–15 minutes until chicken reaches 165°F.
  4. Cook pasta separately according to package directions until al dente.
  5. Remove chicken from pot and shred using forks.
  6. Whisk together half-and-half and cornstarch; stir into the soup and cook for another minute until thickened.
  7. Combine shredded chicken, cooked pasta, and fresh spinach into the pot; heat through.
  8. Serve hot topped with ricotta, Parmesan, or mozzarella as desired.
