  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 1/2 tsp dried marjoram
  • 1 pinch of nutmeg
  • Salt and pepper (to taste)
  • 4 cups vegetable broth (or water)
  • 2 whole bay leaves (optional)
  • 1/3 cup dairy-free cream
  • Fresh parsley (to garnish)
  • Sliced vegan sausage (optional)

Instructions

  1. In a large pot, heat oil over medium heat. Add diced onion and sauté for 3 minutes until softened. Stir in minced garlic, celery, carrots, potatoes, and spices; sauté for another minute.
  2. Pour in vegetable broth and add bay leaves if desired. Bring to a boil then reduce heat to simmer for about 20 minutes until vegetables are tender.
  3. Remove half of the soup into another pot; blend this portion until smooth using an immersion blender or regular blender.
  4. Return blended soup to the pot; stir in dairy-free cream and adjust seasonings as needed. Simmer for a few more minutes.
  5. Serve hot garnished with fresh parsley and sliced vegan sausage if preferred.
