  • ¼ cup unsalted butter, cold and cut into small pieces (for streusel topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until moistened; small lumps are okay.
  5. Gently fold in chopped apples.
  6. For the streusel topping: mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  7. Fill muffin cups with batter and sprinkle streusel on top.
  8. Bake for 18–22 minutes until golden brown and a skewer comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.
