  • 4 grouper fillets (68 oz each)
  • 1 cup coconut milk (unsweetened)
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 tablespoon Thai red curry paste
  • 1 small pineapple, diced
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon grated ginger
  • ½ teaspoon turmeric powder
  • 1 teaspoon lime zest
  • Juice of 1 lime
  • 1 tablespoon honey (optional)
  • 1 small red chili, thinly sliced (optional)

Instructions

  1. Pat grouper fillets dry and season with garlic powder, paprika, cayenne (if using), salt, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook grouper for 3-4 minutes per side until golden brown. Set aside.
  3. In the same skillet, melt butter and sauté onion, garlic, and ginger until fragrant. Stir in red curry paste and turmeric.
  4. Add coconut milk, lime zest, lime juice, pineapple, and honey; simmer for 5-7 minutes until slightly thickened.
  5. Return grouper to the skillet and spoon the sauce over it; warm through for an additional 2-3 minutes.
  6. Garnish with fresh cilantro and serve with lime wedges over jasmine or coconut rice.
