  • 1 bag Bob’s Red Mill Gluten Free Bread Mix
  • ½ cup granulated sugar
  • 4 ½ tsp instant yeast
  • 1 ¼ cups water
  • ½ cup unsalted butter (or vegan alternative)
  • 1 large egg + 1 egg white (or vegan substitute)
  • For the filling: 6 tbsp unsalted butter, ½ cup light brown sugar, 2 tbsp ground cinnamon
  • For the frosting: ¼ cup unsalted butter, 4 oz cream cheese (or vegan cream cheese), powdered sugar, vanilla bean paste

Instructions

  1. In a mixing bowl, combine gluten-free bread mix, sugar, yeast, baking powder, baking soda, and salt.
  2. In another bowl, mix water, butter, and apple cider vinegar. Gradually add to dry ingredients until smooth.
  3. Incorporate eggs into the dough.
  4. Cover and let rise in a warm area until doubled in size (about an hour).
  5. Roll out the dough and spread with soft butter; sprinkle with brown sugar and cinnamon.
  6. Roll tightly and slice into individual rolls.
  7. Allow to rise again for 30 minutes on a lined baking sheet before baking at 350°F for about 30 minutes until golden brown.
  8. While baking, prepare frosting by beating together all ingredients until smooth. Drizzle over warm rolls.
