  • 1 and 1/2 tablespoons cinnamon
  • 1 cup softened salted butter (2 sticks)
  • 1 and 2/3 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar
  • 1 and 1/2 tablespoons cinnamon

Instructions

  1. Prepare the filling by beating softened butter, brown sugar, and cinnamon until smooth. Form into small balls and freeze for 20 minutes.
  2. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In the same bowl, beat together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, followed by vanilla.
  4. Fold in flour, baking soda, kosher salt, and cream of tartar until just combined.
  5. Gently incorporate the frozen filling into the dough.
  6. Shape dough into two-inch balls, roll in cinnamon-sugar, and place on baking sheets with space between each.
  7. Bake for about 11–12 minutes until golden but soft; reshape if needed after removing from the oven.
  8. Let cool on pans for five minutes before transferring to wire racks.
