  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Boil the cauliflower in salted water for 5–6 minutes until tender yet firm. Drain and set aside.
  2. In a saucepan over medium heat, melt butter and whisk in flour, cooking for about 1 minute. Gradually add warmed milk while whisking until thickened (4–5 minutes).
  3. Stir in mustard (if using), nutmeg, salt, and pepper. Mix in cheddar and Parmesan until smooth.
  4. Preheat oven to 400°F (200°C). Layer cooked cauliflower in a baking dish and pour cheese sauce over it.
  5. Top with extra cheddar and bake for 20–25 minutes until golden brown. Broil for an additional 2–3 minutes if desired.
  6. Serve hot, garnished with fresh thyme or parsley if preferred.
