  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup chopped peanuts (or sunflower seeds)
  • 2 tablespoons sesame seeds
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions until fluffy. Let cool.
  2. In a large bowl, combine cooled quinoa with bell pepper, cucumber, carrots, green onions, cilantro, peanuts (or sunflower seeds), and sesame seeds.
  3. In a small bowl, whisk together soy sauce, lime juice, honey (or maple syrup), sesame oil, grated ginger, and minced garlic. Season with salt and pepper.
  4. Pour dressing over the salad mixture and toss to coat evenly. Chill in the refrigerator for 15–20 minutes before serving.
