  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice apple vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)
  • 2 cooked chicken breasts, chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. In a small bowl, whisk together peanut butter, soy sauce, brown sugar or honey, rice apple vinegar, minced garlic, minced ginger, and sriracha sauce. Add water if desired for thinning.
  2. In a large bowl, combine chopped chicken, coleslaw mix, grated carrot, chopped cilantro, and peanuts. Drizzle with half of the sauce and toss to combine; let sit briefly.
  3. Warm tortillas in the microwave for about 30 seconds.
  4. Evenly divide the filling among the tortillas and roll tightly. Serve immediately with remaining sauce on the side.
