  • 4 to 5 lb beef shoulder roast
  • 2 cups fresh apple cider
  • 2 cups chicken broth
  • 2 tbsp Dijon mustard
  • 1 head garlic
  • Fresh herbs: rosemary and thyme
  • Salt and black pepper
  • 1 red onion, cut into thick rounds
  • 2 firm, slightly tart apples, peeled and cut into wedges

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Heat oil in a Dutch oven over medium-high heat. Sear beef on all sides until browned (4-5 minutes per side). Remove and set aside.
  3. In the same pot, cook red onion until softened. Add garlic, apple cider, chicken broth, mustard, salt, and pepper; mix well.
  4. Return beef to pot along with rosemary, thyme, and apple wedges.
  5. Cover and braise in the oven for approximately 3½ hours until tender.
  6. Let rest before slicing and serve warm.
