  • ½ cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 eggs
  • 3 ⅔ cups gluten-free flour (or all-purpose)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ⅓ cup finely diced strawberries

  2. Scoop teaspoon-sized balls from the mixture onto a parchment-lined baking pan and freeze.
  3. In a clean stand mixer, mix cold butter, granulated sugar, and brown sugar until creamy.
  4. Add eggs and mix until combined.
  5. Stir in gluten-free flour, baking soda, vanilla extract, and salt until a thick dough forms; fold in diced strawberries.
  6. Chill the dough for about 30 minutes.
  7. Preheat oven to 350°F; prepare another baking pan with parchment paper.
