  • 4 ounces cream cheese (softened)
  • 1 large egg
  • 1 tablespoon olive oil
  • ½ teaspoon dried dill
  • 2 cups fresh spinach (chopped and packed)
  • ¾ cup crumbled feta
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry (thawed)
  • 1 tablespoon butter (melted)

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a muffin pan with cooking spray.
  2. In a microwave-safe dish, soften cream cheese in the microwave until creamy. Mix in egg, olive oil, and dried dill.
  3. In another bowl, combine chopped spinach and crumbled feta. Add the cream cheese mixture, season with salt and pepper, and mix well.
  4. Cut puff pastry into 9 squares, line each muffin cup with pastry, fill with spinach mixture, gather the points of the pastry over the filling, and brush lightly with melted butter.
  5. Bake for 20 minutes or until golden brown. Allow to cool slightly before removing from the pan.
