  • 1 bag frozen chopped spinach (10 oz), thawed and squeezed dry
  • 1 block cream cheese (8 oz), softened
  • 1/2 cup grated Parmesan
  • 1/4 cup mayo
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • pinch red pepper flakes
  • 1 sheet puff pastry, thawed but still cold
  • 1 egg, for brushing

Instructions

  1. In a mixing bowl, combine cream cheese, Parmesan, mayo, garlic powder, onion powder, and black pepper. Add the thawed spinach after squeezing out all excess water. Mix everything until well combined.
  2. Flour your counter lightly to prevent sticking. Roll out the puff pastry into a large rectangle. Spread the spinach mixture evenly across the pastry, leaving one long side empty for sealing later.
  3. Starting from one filled end, roll the pastry tightly like a jelly roll. Wrap the log in plastic wrap and refrigerate for at least 30 minutes to firm up.
  4. Preheat your oven to 400°F while you wait. Remove the log from the fridge and slice it into half-inch rounds. Place them on a baking sheet lined with parchment paper.
  5. Beat an egg with a splash of water; brush this mixture over each pinwheel. Bake for 15–20 minutes or until they puff up and turn golden brown.
