  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chipotle peppers in adobo sauce
  • Seasonal vegetables (bell peppers, asparagus, peas)
  • 2 tbsp honey
  • 1 tbsp avocado oil
  • Salt and freshly cracked pepper to taste
  • 1 tbsp grass-fed butter
  • 1 small sweet onion, finely diced
  • 3 fresh garlic cloves, minced
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • 1/4 cup shaved Parmigiano
  • 1/4 cup chopped fresh parsley or cilantro for garnish

Instructions

  1. Season chicken with salt, pepper, and honey. Cook in a skillet with avocado oil for 6-7 minutes on each side until golden brown; let rest before slicing.
  2. Boil salted water and cook penne pasta until al dente; drain and reserve some cooking water.
  3. In the same skillet, sauté onion, garlic, bell peppers, asparagus, and peas in avocado oil and butter until tender.
  4. Lower heat and stir in heavy cream, Parmesan cheese, chipotle peppers, paprika, cayenne (if desired), salt, and pepper; simmer until thickened.
  5. Toss the cooked pasta into the skillet to coat evenly; add reserved pasta water as needed.
  6. Serve topped with sliced chicken and garnish with shaved Parmigiano and fresh herbs.
