  • 2 egg yolks (room temperature)
  • 2 eggs (room temperature)
  • 4 oz Parmesan (finely grated)
  • 12 ounces turkey strips (roughly chopped)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon Kosher salt
  • Chopped parsley (to serve)

Instructions

  1. Preheat the oven to 400°F. Optionally line a baking sheet with parchment paper.
  2. Slice spaghetti squash in half lengthwise, scoop out seeds, and place flesh side down on the baking sheet. Bake until fork-tender (30-45 minutes).
  3. Allow the squash to cool slightly before shredding into noodle-like strands with a fork.
  4. In a medium bowl, whisk together egg yolks, whole eggs, and grated Parmesan until well combined.
  5. Sauté turkey strips in a skillet over medium heat until crispy (5-7 minutes), then add minced garlic.
  6. Add shredded spaghetti squash to the skillet and mix thoroughly with salt.
  7. Remove from heat and toss the mixture with the egg mixture using tongs until well coated. Serve garnished with chopped parsley.
