  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry the cucumbers. Cut each cucumber lengthwise and gently smash them slightly with your knife, then chop into 1-inch pieces.
  2. Peel and chop the avocado into bite-sized pieces, adding it to the bowl with the cucumbers.
  3. Mix in crumbled feta cheese, chopped pistachios, dill, and chives.
  4. In a separate jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
  5. Pour the dressing over the salad mixture and gently toss until evenly coated. Serve immediately or chill for up to an hour before serving.
