  • 12 ounces mushrooms (sliced)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 2 large shallots (sliced)
  • ½ cup apple vinegar
  • 1½ cups chicken broth
  • 1 teaspoon Dijon mustard
  • 2 teaspoons cornstarch (dissolved in 2 tablespoons water or broth)

Instructions

  1. Pat the chicken dry and cut into cutlets. Dredge in a mixture of flour, salt, pepper, and garlic powder.
  2. Heat butter and olive oil in a skillet over medium heat. Cook the chicken until golden brown on both sides; set aside to keep warm.
  3. In the same skillet, add remaining butter and sauté mushrooms until browned. Add shallots and garlic; cook until softened.
