  • 2 packs udon noodles
  • 200 g fresh beef, thinly sliced
  • 1 tbsp garlic, minced
  • 1 white onion, sliced
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper
  • Chinese cabbage (or any leafy green)
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp corn starch or potato starch + water (for slurry)
  • 1 tsp Chinese white rice vinegar
  • Salt to taste
  • Sugar to taste
  • 3 tbsp water
  • 1/2 tsp potato starch

Instructions

  1. Marinate the beef: In a bowl, mix minced garlic, sesame oil, soy sauce, Chinese white rice vinegar, and cornstarch slurry. Add the beef and marinate for 10 minutes.
  2. Cook the udon: Boil water in a pot, add udon noodles, and cook for 1-2 minutes until slightly loose. Drain and set aside.
  3. Prepare the sauce: Mix remaining marinade with dark soy sauce, black pepper, water, and potato starch.
  4. Stir-fry: Heat a wok on medium heat, sauté onions and garlic until soft. Add marinated beef and cook until browned. Pour in the sauce and simmer until thickened.
  5. Combine: Toss cooked udon noodles and chopped cabbage into the wok to coat with sauce. Serve hot.
