  • 16 oz raw medium shrimp (thawed and drained)
  • 1/2 red bell pepper (cut into strips)
  • 1/4 cup creamy ranch dressing
  • 1 Tbsp cherry pepper spread
  • 3 Tbsp parmesan cheese
  • 3 Tbsp olive dressing
  • 3/4 cup all-purpose flour
  • 2 Tbsp cornstarch
  • 2 Tbsp ground cornmeal
  • 1/2 Tbsp seasoned salt
  • 1/2 Tbsp garlic salt
  • 1 tsp lemon pepper
  • 2 tsp paprika
  • 1 Tbsp dried parsley

Instructions

  1. Prepare the spicy ranch dressing by mixing ranch dressing and cherry pepper spread in a bowl. Cover and refrigerate.
  2. In another bowl, whisk together the breading ingredients, reserving half for the wet batter.
  3. Combine the reserved breading with cold water to create a smooth wet batter.
  4. Dip shrimp and bell pepper strips into the wet batter followed by the dry breading mixture.
  5. Heat oil in a deep fryer or pot over medium-high heat and fry in batches until golden brown (about 2–3 minutes for shrimp; 1 minute for peppers).
  6. Drain on paper towels and serve hot with dipping sauces.
