  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (drained)
  • ¼ cup chopped fresh basil
  • Optional: pinch of black pepper or red pepper flakes for a kick

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, milk, olive oil, and Greek yogurt until smooth.
  3. In another bowl, combine flour, baking powder, salt, and garlic powder.
  4. Add the dry ingredients to the wet mixture and stir gently until just combined. Fold in mozzarella cheese, sun-dried tomatoes, and basil.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for about 40–45 minutes or until golden brown. Check doneness with a toothpick; it should come out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
