  • Fettuccine or penne pasta
  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon dried sage
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25–30 minutes until golden brown.
  2. In a large pot, bring salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a skillet over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and dried sage; cook for an additional minute.
  4. Add roasted butternut squash and vegetable broth to the skillet; blend everything until smooth.
  5. Return the sauce to the skillet over low heat, add cooked pasta, and mix well, adding reserved pasta water as needed for consistency. Season with salt and pepper.
