  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper until well mixed.
  2. Shape the mixture into small meatballs (about 1 inch in diameter) and set aside.
  3. Heat olive oil in a large pot over medium heat and brown the meatballs for about 5 minutes; set aside.
  4. In the same pot, sauté chopped onions until translucent (3-4 minutes).
  5. Add chicken broth to the pot and bring to a boil; then reduce heat to simmer.
  6. Return meatballs to the pot and simmer for about 15 minutes.
  7. Stir in heavy cream and spinach; cook until spinach wilts (about 2 minutes).
  8. Serve in bowls garnished with fresh basil.
