  • 2 acorn squash
  • ½ pound ground chicken sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the acorn squashes lengthwise and scoop out seeds.
  3. Place cut side down on the baking sheet and bake for about 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook the ground chicken sausage until browned; set aside.
  5. In the same skillet, heat olive oil and sauté onions for 4–5 minutes until softened.
  6. Add kale, garlic, celery, apple, thyme, sage, and rosemary; cook for an additional 4–5 minutes.
  7. Combine cooked sausage with veggie mixture; adjust seasoning as needed.
  8. Scoop out some flesh from the baked squash and mix it into the filling.
  9. Generously fill each squash half with the mixture and return to the oven for another 15 minutes.
  10. Top with feta cheese and nuts; bake for an additional 5 minutes.
