  • 45 Bone-In Chicken Thighs
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsps Fresh Rosemary, chopped
  • 1 Red Onion, sliced
  • 12 Honeycrisp Apples, sliced
  • 4 tbsps Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or white grape juice
  • 2 tbsps Dijon Mustard
  • 3 cloves Garlic
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Season chicken thighs with onion powder, garlic powder, smoked paprika, thyme, salt, and pepper.
  3. In a hot cast iron skillet with olive oil, sear the chicken thighs skin-side down until golden brown (5-7 minutes per side).
  4. Add sliced red onions and apples around the chicken in the skillet.
  5. Transfer to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. For the sauce, combine butter, apple cider, chicken broth (or white grape juice), Dijon mustard, and minced garlic in the same pan over medium heat; whisk until combined.
  7. Return chicken and apples to the pan, spoon sauce over them before serving.
