  • 9 Roma tomatoes
  • 1 yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh thyme
  • 1 cup fresh basil
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • 3 tbsp extra virgin olive oil
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 tbsp sugar

Instructions

  1. Preheat your oven to 375°F.
  2. Arrange sliced Roma tomatoes on a baking sheet; drizzle with olive oil and season with salt and pepper. Roast for 1 hour.
  3. In a large pot over medium-high heat, warm olive oil or butter and sauté diced onion until translucent (about 5 minutes). Add minced garlic and thyme; sauté until fragrant.
  4. Stir in crushed tomatoes, chopped basil, and sugar; simmer for 10 minutes.
  5. Add roasted tomatoes and chicken stock; simmer for another 30 minutes.
  6. Blend the soup until smooth using an immersion blender or traditional blender.
  7. Return to heat and mix in heavy cream until well combined.
  8. Serve hot, optionally topped with mini croutons.
