  • 1/2 cup plus 1 tablespoon (110 g) light brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla
  • 1 ½ teaspoons red gel food coloring
  • 1 1/4 cups (160 g) all-purpose flour
  • 2 tablespoons cocoa powder, sifted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup red sanding sugar for rolling
  • 1/4 cup (50 g) granulated or coarse sugar
  • Dollop of red gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and red gel food coloring; mix until well combined.
  4. In another bowl, whisk together all-purpose flour, cocoa powder, baking soda, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.
  5. Scoop portions of dough and roll each ball in red sanding sugar to coat.
  6. Place on the prepared baking sheet and bake for about 10 minutes or until edges are set but centers remain soft. Allow cooling on the baking sheet for a few minutes before transferring to wire racks.
