  • 3 oz cream cheese (room temperature)
  • 12 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • Filling: 1 large egg, ¼ cup brown sugar, pinch salt, ½ teaspoon pumpkin spice, ¼ cup whole milk, ½ cup pumpkin puree, ¼ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In one bowl, mix flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until smooth; add sugars and mix until fluffy. Incorporate egg yolk and vanilla.
  3. Gradually combine dry ingredients with wet until just mixed. Chill dough for about 15 minutes.
  4. Shape dough into balls, roll in coarse sugar, and place on the baking sheet.
  5. Prepare filling by whisking together all filling ingredients until smooth.
  6. Make an indentation in each dough ball and fill with the prepared mixture.
  7. Bake for approximately 15 minutes or until edges are golden brown.
