  • 1 cup all-purpose flour
  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. In a blender, combine all crepe ingredients (flour, sugar, salt, spices, milk, pumpkin puree, eggs, butter, vanilla) until smooth. Let the batter rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and grease lightly with butter. Pour about ¼ cup of batter into the pan and swirl to coat evenly.
  3. Cook until golden on the bottom (about 1–1½ minutes), then flip and cook the other side for another minute.
  4. Repeat with remaining batter, adding butter as needed.
  5. Fill each crepe with the maple cream cheese mixture or your choice of filling. Fold and serve.
