  • 1 & 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, softened but still cool
  • 1 (15-ounce) can pumpkin puree, divided
  • 4 large eggs
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 3 tablespoons milk
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch cake pan.
  2. For the streusel topping, whisk together flour, brown sugar, granulated sugar, salt, cinnamon, and pumpkin pie spice in a large bowl. Stir in melted butter until mixture resembles wet sand.
  3. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Cut in cool butter until crumbly.
  4. Mix half of the pumpkin puree into the dry mixture using an electric mixer until combined.
  5. In a separate bowl, whisk remaining pumpkin puree with eggs, vegetable oil, and vanilla extract; then blend with the flour mixture until fluffy.
  6. Layer the batter and streusel in the prepared pan; bake for about 35 minutes. Sprinkle remaining streusel on top and bake for an additional 10–15 minutes until done.
  7. Allow cooling before icing with a simple mixture of softened butter, vanilla extract, salt, milk, and powdered sugar.
