  • 1 can (15 oz) pure pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 tsp pumpkin pie spice
  • 1/2 tsp kosher salt
  • 1/4 cup (55g) unsalted butter, melted
  • 1/2 cup (65g) all-purpose flour for topping
  • 2 tbsp granulated sugar for topping
  • 1/2 tsp pumpkin pie spice for topping
  • 1/2 cup (60g) powdered sugar for glaze
  • 1/4 cup (85g) pure maple syrup for glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a loaf pan.
  2. In a medium bowl, mix melted butter, flour, brown sugar, granulated sugar, and pumpkin pie spice until crumbly for the topping. Set aside.
  3. In a large bowl, whisk together pumpkin puree, sugars, oil, eggs, and milk until smooth.
  4. In another bowl, combine flour, baking soda, spices, and salt. Gradually add to the wet mixture until just combined.
  5. Pour half the batter into the loaf pan; sprinkle half of the topping over it. Add remaining batter and top with remaining streusel.
  6. Bake for 60-80 minutes or until a toothpick comes out clean. Cool before glazing.
  7. For the glaze, whisk powdered sugar and maple syrup until smooth and drizzle over cooled bread.
