  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • ½ cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. In a mixing bowl, blend chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander (if using), smoked paprika, salt, and pepper until smooth.
  2. Place chicken in another bowl and pour marinade over it; coat well. Marinate for at least 30 minutes or overnight for deeper flavor.
  3. Preheat grill or grill pan to medium-high heat and brush with olive oil.
