  • 1 tbsp unsalted butter
  • 1 brown onion (finely chopped)
  • 2 garlic cloves (minced)
  • 3 carrots (peeled and diced)
  • 2 scallions (chopped)
  • 3 waxy potatoes (diced)
  • ½ cup frozen green peas
  • 4 cups chicken broth
  • 4 tbsp full-fat sour cream
  • 4 tbsp chopped fresh dill

Instructions

  1. Prep all vegetables: dice the potatoes and carrots, chop the scallions, mince the garlic, and chop the dill.
  2. In a large pot over medium-low heat, melt the butter. Add onions and garlic; cook until fragrant.
  3. Stir in carrots and scallions; cook for another couple of minutes.
  4. Add salt, pepper, marjoram, turmeric, nutmeg, and bay leaf.
  5. Incorporate the diced potatoes and frozen peas into the pot; pour in chicken broth.
  6. Increase heat to high until boiling, then reduce heat to low. Cover and simmer for 15 minutes.
  7. Stir in sour cream and 3 tablespoons of dill; cook uncovered for another 5 minutes before serving with remaining dill on top.
