  • 3 packets (21g) unflavored vegan gelatin
  • 1 cup (227g) cool water, divided
  • 1 ½ cups (298g) granulated sugar
  • 1 cup (312g) light corn syrup
  • 1/8 teaspoon table salt
  • 1/8 teaspoon peppermint extract (optional)
  • ½ cup (78g) peppermint crunch or hard peppermint candies
  • Confectioners' sugar for dusting

Instructions

  1. In a mixing bowl, combine the vegan gelatin with ½ cup of cool water and set aside.
  2. In a saucepan, mix granulated sugar, corn syrup, salt, and remaining water; heat until the sugar dissolves.
  3. Increase heat and cook until the mixture reaches 238°F to 240°F on a candy thermometer; then remove from heat.
  4. Pour the hot syrup into the gelatin mixture while mixing on low speed. Gradually increase speed and whip until thick and fluffy (3-10 minutes).
  5. If using, fold in optional peppermint extract and peppermint crunch gently.
  6. Transfer the mixture into a greased 9" x 13" pan, smoothing it out evenly. Dust with confectioners' sugar and let it set for several hours or overnight.
  7. Once set, cut into desired shapes and store in an airtight container.
