  • 1 cup whipped topping (Cool Whip), thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1½ cups chopped pecans
  • Pinch of salt

Instructions

  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a 9×13-inch baking dish and chill for 10–15 minutes.
  2. Beat softened cream cheese until smooth. Mix in powdered sugar and vanilla extract, then fold in whipped topping. Spread evenly over the chilled crust.
  3. In a saucepan over medium heat, combine brown sugar, corn syrup, and butter. Stir until bubbling. Remove from heat and whisk in beaten eggs slowly to avoid scrambling. Stir in pecans and salt; cool slightly.
  4. Pour cooled pecan filling over the cream cheese layer evenly. Cover and refrigerate for at least 4 hours or overnight.
