  • 4 medium sweet potatoes
  • 2 tbsp butter
  • 3 tbsp maple syrup
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup pecans
  • 1 tsp cinnamon
  • 1/4 cup flour (or gluten-free flour)
  • 2 tbsp butter
  • 2 tbsp maple syrup

Instructions

  1. Preheat oven to 425°F (220°C). Place washed sweet potatoes on a baking sheet and bake for 40-55 minutes until soft.
  2. Once done, reduce oven temperature to 350°F (175°C) and let the sweet potatoes cool slightly.
  3. Slice each potato lengthwise and scoop out the flesh into a bowl, leaving 1/4 inch in the skin.
  4. Mash the flesh with butter, maple syrup, salt, and cinnamon until smooth. Stuff back into skins.
  5. In another bowl, mix chopped pecans, flour, butter, maple syrup, and cinnamon for the topping; sprinkle over each stuffed potato.
  6. Bake again for 20-30 minutes until heated through and topping is golden brown.
