  • 1 10 oz bag mini vegan marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal
  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare a 9×13 inch pan by greasing it with butter or non-stick cooking spray.
  2. In a large saucepan, melt together the unsalted butter, mini vegan marshmallows, and peanut butter over low heat until smooth.
  3. Remove from heat and stir in the Rice Krispies until fully coated.
  4. Press the mixture evenly into the prepared pan using lightly greased hands.
  5. Melt chocolate chips in a medium heatproof bowl in the microwave, stirring every 45 seconds until nearly melted. Stir in vegetable oil.
  6. Pour the melted chocolate over the pressed rice krispie base and let it set at room temperature for about 2 hours.
  7. Once set, cut into squares and store in an airtight container.
