  • 2/3 cup brown sugar
  • 1/3 cup honey

  • 1 and 1/2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (177°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix oil, peanut butter, brown sugar, honey, eggs, milk, and vanilla until smooth.
  4. Combine wet and dry ingredients gently; fold in zucchini and chocolate chips.
  5. Pour batter into the pan and bake for 55–70 minutes until a toothpick comes out clean.
  6. Cool in the pan for an hour before slicing.
