  • 18 to 24 ounces of bread cubes (preferably toasted or stale)
  • 1 cup unsalted butter
  • 3 cups diced sweet onion
  • 2 cups diced celery
  • 6 minced garlic cloves
  • Kosher salt and pepper, to taste
  • 3 tablespoons chopped fresh sage
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons chopped fresh rosemary
  • 2 ½ cups chicken or vegetable stock
  • 2 large eggs

Instructions

  1. Prepare bread cubes by cutting stale or toasted bread into cubes. If using fresh bread, toast at 350°F for about 15 minutes.
  2. Preheat oven to 350°F and lightly grease a baking dish.
  3. In a skillet, melt butter over medium heat and sauté onions, celery, and garlic until softened (8-10 minutes). Stir in herbs and one cup of stock for one minute.
  4. Combine the sautéed mixture with the bread cubes in a large bowl.
  5. Whisk remaining stock with eggs in a separate bowl, then pour over the bread mixture; mix until well combined.
  6. Transfer mixture to the baking dish and bake for 45-50 minutes or until internal temperature reaches 160°F.
