  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • Optional: crushed red pepper flakes

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and smoked paprika; cook for 6-7 minutes on each side until fully cooked. Remove from skillet and slice.
  3. In the same skillet, melt butter; sauté onions and garlic for 2-3 minutes.
  4. Add chicken broth and bring to a simmer; stir in heavy cream and cook for another 2 minutes.
  5. Reduce heat and stir in Monterey Jack and Parmesan cheese until melted.
  6. Add cooked spaghetti, tossing gently to coat with sauce.
