  • 2 cups white sugar
  • 4 large eggs (room temperature)
  • 1/4 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 24 drops green food coloring
  • 1 1/2 teaspoons peppermint extract (to taste)
  • 1/4 teaspoon salt
  • 22 1/2 cups powdered sugar
  • 12 tablespoons heavy cream (or milk, as needed)
  • 6 oz semi-sweet chocolate (or 50% dark chocolate)
  • 1/2 cup unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Melt the unsalted butter and semi-sweet chocolate together in a microwave-safe bowl until smooth.
  3. Stir in the white sugar, then add eggs one at a time, mixing well after each addition. Incorporate cocoa powder, flour, and salt until just combined.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out with moist crumbs. Allow cooling completely.
  5. For the mint frosting, beat softened butter with peppermint extract and food coloring. Gradually mix in powdered sugar until desired consistency is reached.
  6. Spread the mint frosting over cooled brownies.
  7. Melt additional semi-sweet chocolate with butter for the topping; pour over frosted brownies and spread evenly.
  8. Chill for an hour before slicing into squares.
