1 tablespoon olive oil
1 small white onion, finely diced
1 large green bell pepper, diced
1 (15-ounce) can diced tomatoes, with their juices
1 tablespoon butter
1 teaspoon Aleppo pepper
fine sea salt
freshly-cracked black pepper
3 –4 eggs
sliced chives or chopped parsley (optional)
crumbled feta (optional)
sliced avocado (optional)
Heat olive oil in a large skillet over medium-high heat. Add finely diced onion and diced green bell pepper; sauté for 5 minutes until softened.
Reduce heat to medium, add canned tomatoes, butter, Aleppo pepper, sea salt, and black pepper; stir well and sauté for an additional 2 minutes.
Crack 3-4 eggs on top of the mixture. Let cook for about 1 minute before gently stirring to create swirls. Cook until eggs are just set but still soft (about 3-4 minutes total).
Serve immediately with optional garnishes such as sliced chives or crumbled feta alongside crusty bread.
