  • 1 tablespoon olive oil
  • 1 small white onion, finely diced
  • 1 large green bell pepper, diced
  • 1 (15-ounce) can diced tomatoes, with their juices
  • 1 tablespoon butter
  • 1 teaspoon Aleppo pepper
  • fine sea salt
  • freshly-cracked black pepper
  • 34 eggs
  • sliced chives or chopped parsley (optional)
  • crumbled feta (optional)
  • sliced avocado (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add finely diced onion and diced green bell pepper; sauté for 5 minutes until softened.
  2. Reduce heat to medium, add canned tomatoes, butter, Aleppo pepper, sea salt, and black pepper; stir well and sauté for an additional 2 minutes.
  3. Crack 3-4 eggs on top of the mixture. Let cook for about 1 minute before gently stirring to create swirls. Cook until eggs are just set but still soft (about 3-4 minutes total).
  4. Serve immediately with optional garnishes such as sliced chives or crumbled feta alongside crusty bread.
