  • 3 tablespoons lemon juice
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 1 medium red onion
  • 1 medium zucchini
  • 1 large bell pepper
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 2 tablespoons fresh parsley

Instructions

  1. Gather all ingredients and trim chicken thighs of excess fat. Rinse and pat dry.
  2. Season chicken with salt, pepper, oregano, thyme, and paprika in a mixing bowl.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Cook seasoned chicken for 5–7 minutes until golden brown.
  5. Add minced garlic and sauté for 30 seconds until fragrant.
  6. Stir in sliced bell peppers and cherry tomatoes; cook for an additional 3–4 minutes.
  7. Mix in Kalamata olives and fresh herbs; warm through for 1 minute.
  8. Serve hot, garnished with additional herbs if desired.
