1.5 lbs white fish fillets (like cod, halibut, or tilapia)
2 tablespoons olive oil
1 medium red onion, sliced
3 garlic cloves, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup cherry tomatoes, halved
1/3 cup pitted Kalamata olives, halved
1 tablespoon capers (optional)
Juice of 1 lemon
Zest of 1 lemon
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges, for serving
Instructions
Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
In a mixing bowl, combine the sliced onions, bell peppers, cherry tomatoes, garlic, olives, capers (optional), olive oil, oregano, salt, and pepper. Mix well.
Spread the vegetable mixture evenly in the baking dish. Place the fish fillets on top and drizzle with lemon juice and zest; season with additional salt and pepper if desired.
Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
Garnish with fresh parsley before serving. Enjoy with lemon wedges on the side.
