  • 3 large apples
  • 1 onion
  • 5 cloves garlic
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 3 tablespoons stone ground dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Core the apples and chop them into ½” cubes. Slice the carrots into ¼” thick pieces, dice the onion into ½” pieces, and finely chop the garlic.
  3. In a mixing bowl, whisk together olive oil, maple syrup, dijon mustard, salt, black pepper, and thyme until combined.
  4. Add the chopped carrots, apples, onions, and garlic to the bowl and toss until evenly coated.
  5. Spread the mixture on a baking sheet in an even layer and roast for 15 minutes.
  6. Flip the mixture and roast for another 10-15 minutes until tender and caramelized.
