  • 2 cups sharp yellow cheddar cheese, grated

  • ¼ cup mozzarella cheese, grated

  • ½ tablespoon mustard powder

Instructions

  1. In a large pot, bring the broth to a boil over medium-high heat. Add the macaroni and cook until al dente (about 8-10 minutes). Set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour to create a roux; cook for about 1-2 minutes until smooth.
  3. Gradually whisk in milk until smooth; it may thicken initially but will become creamy as you add more.
  4. Stir in cheddar, Parmesan, and mozzarella cheeses on low heat along with garlic and mustard powders.
  5. Combine the cheesy mixture with the cooked macaroni soup until well combined.
  6. Serve garnished with chopped green onions and freshly cracked black pepper.
