  • 14 oz chicken sausage or turkey sausage
  • 1 yellow onion
  • 1 green bell pepper
  • 3 ribs celery
  • 4 cloves garlic
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp freshly cracked black pepper
  • 2 bay leaves
  • 6 cups water
  • 1.5 cups long grain white rice, uncooked
  • 1/4 cup chopped parsley
  • 1 Tbsp salt, or to taste
  • 3 green onions

Instructions

  1. Soak the dry beans overnight in water.
  2. Cook sliced sausage in oil until browned; set aside.

  4. Stir in spices, then add drained beans and water; bring to a boil.
