  • 1½ cups grated zucchini (lightly squeezed)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • ⅓ cup plain Greek yogurt (or applesauce)
  • 2 tbsp lemon zest
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 23 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, sugar, oil, yogurt, lemon juice, lemon zest, and vanilla until smooth.
  4. Mix the dry ingredients into the wet mixture gently until just combined.
  5. Fold in the grated zucchini and pour the batter into the pan.
  6. Bake for 50–55 minutes or until a toothpick comes out clean.
  7. Allow to cool before glazing with powdered sugar mixed with lemon juice.
