  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 to 2 tablespoons fresh lemon zest (to taste)
  • 1 large egg, room temperature
  • 3/4 teaspoon vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/3 cup freeze-dried blueberries, chopped
  • 1/4 cup coarse sanding sugar, for topping

Instructions

  1. In a stand mixer bowl, combine sugars and lemon zest; massage together for enhanced flavor.
  2. Add room temperature butter; mix until light and fluffy.
  3. Incorporate egg and vanilla; blend until combined.
  4. In another bowl, whisk flour, baking soda, cream of tartar, and salt. Gradually add to the butter mixture until just combined.
  5. Gently fold in freeze-dried blueberries.
  6. Chill dough for 30 minutes; preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll dough into balls, coat in sanding sugar, and place on sheets spaced apart.
  8. Bake for 8–9 minutes or until edges are set; cool before serving.
