  • ½ cup water
  • 80 g unsalted butter
  • ½ tsp salt
  • 2 tsp sugar
  • 150 g all-purpose flour
  • 4 eggs
  • 2 cups milk (for diplomat cream)
  • 2 eggs (for diplomat cream)
  • â…” cup sugar (for diplomat cream)
  • 50 g cornstarch (for diplomat cream)
  • 2 tsp vanilla extract (for diplomat cream)
  • ¾ cup unsalted butter (room temperature for diplomat cream)
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a saucepan, combine milk, water, butter, salt, and sugar; bring to a boil.
  3. Add flour all at once; stir until a ball forms. Let cool slightly before adding eggs one at a time.
  4. Spread the choux pastry into two rectangles on parchment-lined baking sheets and bake for 25-30 minutes until golden.
  5. For the diplomat cream, heat milk until boiling. Whisk eggs, sugar, cornstarch, and vanilla in a bowl.
  6. Slowly mix hot milk into egg mixture while whisking continuously, then return to heat until thickened.
  7. Once cooled, layer choux pastry with diplomat cream in between and dust with powdered sugar before serving.
